Summer Tortellini Soup



There isn't anything specifically summery about this soup. But on lazy Sundays, I can't be bothered to make anything too exciting.

I am already busy meal-prepping for whatever, soup, pasta, casserole, whatever that we will be eating for Monday, Tuesday, Wednesday, so Sunday's dinner needs to be simple and comforting. Comforting because it's the end of the weekend, and we just aren't ready.

As I've said before, Terrence and I are mad for soup. We always, always, always have a craving for it, and it is the only dish at restaurants that we don't share, and instead each have to have their own bowl.

Can you really call this a recipe? Dear, God, no. But it was tasty and warm and we both slurped it up in no time flat.

Fresh Basil and Tortellini Soup for the Lazy
Ingredients:
1 12oz (or whatever) package of tortellini. (I used Trader Joe's Spinach Tortellini)
About 20oz vegetable broth (chicken would be fine too, but I don't eat chicken anything so...yeah.)
Handfuls of fresh basil, chopped. (choose your own adventure for the amount)
Parmesan cheese or vegan parm for garnish

Method:
Heat vegetable broth to boiling, add tortellini and cook according to directions on box. (Mine said to boil for 3 mins.)
Remove from heat and add chopped basil, stirring around to distribute flavor.
Serve in bowls garnished with more basil and parmesan.

That's it. Eat it. It's not really a recipe, more of an idea, but for what it's worth, MANGIA. And happy summer days to you. xx
